flaxseed muffins.

I made these muffins the other day and instantly knew I had to share the recipe. I love that they keep you full and that they have the perfect amount of sweetness to them. I'm pretty sure they have made it on my top 5 list of favorite breakfast foods, not only because they smell delicious, but because they taste so dang good!






need:

1 1/2 cups whole wheat flour
3/4 cup flaxseed meal
3/4 cup rolled oats
1 cup brown sugar
2 tbs baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 cup shredded carrots
1/2 cup crushed walnuts
2/4 almond milk
2 eggs, beaten
1tsp vanilla
directions:

Preheat oven at 350 F. Combine the first ten dry ingredients in medium mixing bowl. Add almond milk, beaton eggs, and vanilla to the dry ingredients. Stir until the mixture is evenly moist. Fill greased muffin tin 3/4 full. Bake for 15-20 minutes.

protein pancakes.

I am a pancake lover. I could honestly eat them every day, if it all didn't go straight to my butt. Seriously. I recently found a recipe for cottage cheese and oatmeal pancakes. I decided to try it, maybe tweak it a little bit, and let me tell you, they are AWESOME. I am a big fan of oatmeal so I added a little bit more in my recipe and I found they were a little bit sweeter that way. Enjoy!





 

need:

4 egg whites
1/2 cup rolled oats
1/2 cup low-fat cottage cheese
1/8 teaspoon baking powder
1/2 teaspoon pure vanilla extract


directions:
 
preheat griddle to low-medium heat (200-250 or so for mine)
Add all ingredients together and stir until mixed well
pour 1/2 cup of mixture onto griddle and let sit until top starts to bubble
when mixture starts to bubble, flip and cook other side
 top with fresh berries or bananas

3 pancakes: 327 calories
